HOW TO PREPARE EGUSI SOUP
EGUGI OR AGUSI SOUP is a popular soup eaten with Eba,Fofo or Akpu,by people of southern Nigeria
INGREDIENTS
1. one cup of grinded melon,butter cup +GRINDED CRAYFISH MIX TOGETHER(SOAK IN A LITTLE WATER)
2.palm oil -medium chelsea bottle
3.smoked fish/fresh fish or cooked beef
4.onions,salt,maggi,green vegetable leaves or bitter leaves

Preparation;
A well wash pot is place on a stove,then the palm oil is poured into it ,to hot for say 7minutes,then a pinch of salt is added,it will create some sound don’t be afraid,then onions a higher sound ,there after the grinded melon and crayfish which must have been soak in a little water before now is poured in, to fry the pot may be covered.After 8mins or so the mixure will be sort of sticking to the pot,all you have to do is scrap it out with cooking spoon,the content will look light yellowish because of the palm oil and add little water as you want it to last be careful don’t over pour water,add the fish or meat,a little salt again.Then the vegetable leaves and maggi(a seasoned) is added about some few minutes when the soup is about to be drop from the stove.
